Roast a Breast of Veal

Ingredients

Instructions

  1. Secure the caul over the joint with skewers.
  2. Place the veal at a moderate distance from a brisk fire.
  3. Baste it constantly throughout cooking.
  4. After about an hour and a quarter, remove the caul.
  5. Flour the joint and allow it to brown for the final 15 minutes.
  6. Transfer to a serving dish and pour melted butter over it.
  7. Serve with cut lemon and the usual accompaniments to veal.
  8. Garnish with fried forcemeat balls if desired.
