Rice Mold with Gravy Garnished with Giblets

Ingredients
- g rice
- meat gravy (sugo di carne)
- chicken giblets (rigaglie)
- prosciutto
- butter
- salt
- pepper
- mushrooms or truffles
- Parmesan
- eggs
- pinch flour
Instructions
- Make a good meat gravy for both rice and giblets.
- Fry the giblets (with optional prosciutto) in butter, season, and cook in the gravy; add mushroom or truffle scent.
- Fry the rice dry in butter, cook with boiling water, and flavour with gravy and Parmesan; stir in two beaten eggs once cooled.
- Pour the rice into a greased, paper-lined mold and set it in the Dutch oven.
- Unmold, top with the giblet sauce thickened with a pinch of flour, and surround with the giblets swimming in sauce.
