Instructions

  1. Measure the salt according to the type and size of fish: four ounces per gallon for small fish like mackerel and whiting; five to six ounces per gallon for cod fish, lobsters, crabs, prawns, and shrimps; eight ounces per gallon for salmon.
  2. Mix the measured salt with one gallon of water.
  3. Bring the salted water to a boil.
  4. Skim the scum from the surface immediately as it begins to form and continue skimming throughout cooking.
