To Boil Haddocks

Ingredients
- haddocks
- water
- melted butter
- anchovy sauce
Instructions
- Scrape the outsides of the haddocks very clean.
- Open the fish, empty them, and wash the insides thoroughly, taking out the gillet.
- Curl the haddocks round and fasten the tails to the mouths.
- Arrange them on a fish-plate and lay them into hot salted water (salted as for mackerel).
- Take off all the scum as it rises.
- Simmer them from seven to ten minutes or longer, according to their size—larger fish must be brought more slowly to boil and allowed more time.
- Send them very hot to table with a tureen of melted butter and one of anchovy sauce.
