To Boil Haddocks

Instructions

  1. Scrape the outsides of the haddocks very clean.
  2. Open the fish, empty them, and wash the insides thoroughly, taking out the gillet.
  3. Curl the haddocks round and fasten the tails to the mouths.
  4. Arrange them on a fish-plate and lay them into hot salted water (salted as for mackerel).
  5. Take off all the scum as it rises.
  6. Simmer them from seven to ten minutes or longer, according to their size—larger fish must be brought more slowly to boil and allowed more time.
  7. Send them very hot to table with a tureen of melted butter and one of anchovy sauce.
