Instructions

  1. Take a good piece of milk-fed veal loin with the bone; round it up and tie it compact.
  2. Brown on all sides in a saucepan with a little fine oil and butter.
  3. Salt at half-cooking and finish with broth until almost no juice remains.
  4. No broth: use tomato sauce/paste in water. For extra savor, add finely minced pancetta.
