Semoulina Soup

Instructions

  1. Bring 3 quarts of soup to a boil.
  2. Drop the semoulina very lightly and by degrees into the boiling soup, stirring constantly as it is added.
  3. Continue stirring frequently throughout cooking—the pot should scarcely be left unattended.
  4. Skim carefully.
  5. Let it simmer for twenty to twenty-five minutes until the semoulina is tender.
  6. Serve when ready for table.
