To Boil Windsor Beans

Instructions

  1. Shell the beans only just before cooking.
  2. Wash and drain the beans thoroughly.
  3. Bring a pot of salted water to a boil, salted as you would for peas.
  4. Throw the beans into the boiling water.
  5. Cook until quite tender, 20 to 30 minutes, or less if the beans are very young; when the skin appears wrinkled they are generally tender, but taste to be sure.
  6. Pour the beans into a hot colander and drain them thoroughly.
  7. Send them to table quickly with a tureen of parsley and butter, or with plain melted butter.
  8. If desired, dish a boiled cheek of bacon (trimmed of blackened parts) over the beans, or skin the beans after boiling and gently toss with a little butter before serving.
