Gravy or Sauce for a Goose

Ingredients

Instructions

  1. Mince the onion and brown it in a small saucepan with the butter.
  2. When it begins to brown, stir in the flour.
  3. Cook for 5 to 6 minutes.
  4. Pour in the brown gravy by degrees.
  5. Let it simmer for 15 minutes.
  6. Strain the sauce.
  7. Bring it again to the point of boiling.
  8. Mix the made mustard well with the port wine.
  9. Add the mustard and wine mixture to the sauce.
  10. Season with cayenne pepper and salt if needed.
  11. Do not let the sauce boil after the wine is added.
  12. Serve very hot.
