Gravy or Sauce for a Goose

Ingredients
- 2 oz. mild onion
- 1.5 oz. butter
- 1 teaspoonful flour
- 1/3 pint good brown gravy
- 1 teaspoonful made mustard
- 1 glassful port wine
- cayenne pepper
- salt
Instructions
- Mince the onion and brown it in a small saucepan with the butter.
- When it begins to brown, stir in the flour.
- Cook for 5 to 6 minutes.
- Pour in the brown gravy by degrees.
- Let it simmer for 15 minutes.
- Strain the sauce.
- Bring it again to the point of boiling.
- Mix the made mustard well with the port wine.
- Add the mustard and wine mixture to the sauce.
- Season with cayenne pepper and salt if needed.
- Do not let the sauce boil after the wine is added.
- Serve very hot.
