Stir-Fried Chicken with Pear

Ingredients
- 1 whole young chicken breast
- 3 liang (ounces) pork lard
- 1 ladle sesame oil
- 1 teaspoon cornstarch
- 1 teaspoon salt
- 1 teaspoon ginger juice
- 1 teaspoon Sichuan pepper powder
- snow pear
- shiitake mushroom
Instructions
- Slice the young chicken breast.
- Heat the pork lard in the wok until rendered and hot.
- Stir-fry the chicken slices three or four times over high heat until cooked through.
- Drizzle in the sesame oil.
- Add the cornstarch, salt, ginger juice, and Sichuan pepper powder—each one teaspoon—and toss to combine.
- Add the thin-sliced pear and small mushroom pieces.
- Stir-fry three or four more times until fragrant and the ingredients are well married.
- Turn out onto a five-cun (approximately 6-inch diameter) plate and serve.
