Stir-Fried Chicken with Pear

Ingredients
- 1 whole young chicken breast
- 3 liang (ounces) pork lard
- 1 ladle sesame oil
- 1 teaspoon cornstarch
- 1 teaspoon salt
- 1 teaspoon ginger juice
- 1 teaspoon Sichuan pepper powder
- snow pear
- shiitake mushroom
Instructions
- Slice the young chicken breast. Heat the pork lard in the wok until rendered and hot. Stir-fry the chicken slices three or four times over high heat until cooked through. Drizzle in the sesame oil. Add the cornstarch, salt, ginger juice, and Sichuan pepper powder—each one teaspoon—and toss to combine. Add the thin-sliced pear and small mushroom pieces. Stir-fry three or four more times until fragrant and the ingredients are well married. Turn out onto a five-cun (approximately 6-inch diameter) plate and serve.
