Batter Cakes (Old Style)

Ingredients
- 0.5 cup flour
- 1.5 cup meal
- pinch salt
- 2 eggs
- 0.5 pint sweet milk
- boiling water
Instructions
- Sift together the flour and meal. Add a pinch of salt. Scald the dry mixture with boiling water and stir until smooth. Add the two well-beaten eggs. Thin the batter with sweet milk—it will take about half a pint—until the batter runs very freely.
- Bake by spoonfuls on a hot, well-greased griddle. Serve very hot with fresh sausage, or fried pigs' feet if you would know just how good batter cakes can be.
