TO BAKE MACKEREL

Instructions

  1. Clean and well wash the mackerel, then wipe them very dry.
  2. Fill the insides of the mackerel with forcemeat (No. 1 of Chapter VIII., or oyster forcemeat) and sew them up.
  3. Arrange the filled mackerel closely together in a coarse baking-dish with the roes.
  4. Flour the mackerel lightly and strew a little fine salt over them.
  5. Stick bits of butter upon the mackerel, or pour melted butter over them after dissolving it in a small saucepan.
  6. Bake for half an hour in a moderate oven.
  7. Lift the mackerel carefully into a hot dish after they are taken from the oven.
  8. Send melted butter and a cut lemon to table with the baked mackerel.
