TO BAKE MACKEREL

Ingredients
- mackerel
- forcemeat, No. 1 of Chapter VIII.
- roes
- flour
- salt
- butter
- lemon
Instructions
- Clean and well wash the mackerel, then wipe them very dry.
- Fill the insides of the mackerel with forcemeat (No. 1 of Chapter VIII., or oyster forcemeat) and sew them up.
- Arrange the filled mackerel closely together in a coarse baking-dish with the roes.
- Flour the mackerel lightly and strew a little fine salt over them.
- Stick bits of butter upon the mackerel, or pour melted butter over them after dissolving it in a small saucepan.
- Bake for half an hour in a moderate oven.
- Lift the mackerel carefully into a hot dish after they are taken from the oven.
- Send melted butter and a cut lemon to table with the baked mackerel.
