Fillet, Parisian Style

Ingredients
- beef fillet (best part)
- butter
- salt
- pepper
- pinch parsley
- meat gravy or similar sauce
Instructions
- Cut round chops from the best of the beef fillet, about half a finger thick.
- Fry in coloured butter over a lively fire, seasoning with salt and pepper, until crusted outside and juicy within.
- Scatter chopped parsley and take up at once.
- Cover with meat gravy, or bind the pan juices with a pinch of flour and broth.
