Remoulade Dressing

Ingredients
- 3 hard boiled egg yolks
- 0.5 teaspoon made mustard
- 1 tablespoon Tarragon vinegar
- salt
- Cayenne
- 3 tablespoon olive oil
- 1 raw egg yolk
- 0.5 lemon juice
Instructions
- Mash the three hard boiled egg yolks smooth in a bowl. Add the made mustard, Tarragon vinegar, salt, and Cayenne to taste.
- Add the olive oil drop by drop, stirring constantly. Once the oil is incorporated, add the yolk of a raw egg and stir until light.
- Finish by adding the juice of half a lemon very gradually, stirring continuously. The success of this sauce depends entirely on careful, patient mixing—if hurried or carelessly done, the sauce will curdle.
