  1. Mash the three hard boiled egg yolks smooth in a bowl. Add the made mustard, Tarragon vinegar, salt, and Cayenne to taste.
  2. Add the olive oil drop by drop, stirring constantly. Once the oil is incorporated, add the yolk of a raw egg and stir until light.
  3. Finish by adding the juice of half a lemon very gradually, stirring continuously. The success of this sauce depends entirely on careful, patient mixing—if hurried or carelessly done, the sauce will curdle.
