Sweet Potato Biscuit (Old Style)

Ingredients
- 2 large sweet potatoes
- 3 cups flour
- shortening
- 2 eggs
- sweet milk
- salt
- sugar
- baking soda
- buttermilk
Instructions
- Boil the sweet potatoes soft, then mash them smooth while very hot, removing all strings and eyes. Add a pinch of salt.
- Rub the mashed potatoes well through the sifted flour. Rub in a generous handful of shortening.
- Wet up the mixture soft with the two beaten eggs and sweet milk mixed together. If desired, add a little sugar for sweetness.
- Alternatively, if using soda and buttermilk instead of eggs and sweet milk: mix the baking soda with the buttermilk—just enough to make it foamy, no more—and add this to the dough. In this case, the sugar is advisable.
- Roll the dough to half-inch thickness and cut out with a small cutter. Lay the biscuits in a warm pan and bake brown in a quick oven.
