Broiled Partridge (Breakfast Dish)

Ingredients
- 1 whole young partridge, well-kept
- salt
- cayenne pepper
- fresh butter
- flour
- a little water
- mushroom-catsup
Instructions
- Split the young partridge in half.
- Wipe it thoroughly inside and out with a soft clean cloth, but do not wash it.
- Broil it gently over a very clear fire, sprinkling it with salt and cayenne as it cooks.
- The moment it is taken from the fire, rub a bit of fresh butter over it.
- Make the sauce by browning a good slice of butter with flour.
- Add a little water, cayenne, salt, and mushroom-catsup to the browned butter and flour.
- Pour the sauce over the broiled partridge and send it quickly to table.
