Broiled Partridge (Breakfast Dish)

Instructions

  1. Split the young partridge in half.
  2. Wipe it thoroughly inside and out with a soft clean cloth, but do not wash it.
  3. Broil it gently over a very clear fire, sprinkling it with salt and cayenne as it cooks.
  4. The moment it is taken from the fire, rub a bit of fresh butter over it.
  5. Make the sauce by browning a good slice of butter with flour.
  6. Add a little water, cayenne, salt, and mushroom-catsup to the browned butter and flour.
  7. Pour the sauce over the broiled partridge and send it quickly to table.
