To Boil Artichokes

Instructions

  1. Soak and wash the artichokes well.
  2. Cut off the stems quite close and trim away a few of the lower leaves.
  3. Clip the points of all the leaves.
  4. Throw the artichokes into plenty of fast-boiling, salted water with the addition of soda, which will improve the colour of the vegetable.
  5. Boil always with the stalk-ends uppermost.
  6. Boil very young artichokes for half to three-quarters of an hour, or full-grown ones for one and one-quarter to two hours, until the leaves can be drawn out easily.
  7. Send good melted butter to table with them.
