Origin: London, England
Source: Eliza Acton, 1845
Ingredients
- artichokes
- water
- soda

Instructions
- Soak and wash the artichokes well.
- Cut off the stems quite close and trim away a few of the lower leaves.
- Clip the points of all the leaves.
- Throw the artichokes into plenty of fast-boiling, salted water with the addition of soda, which will improve the colour of the vegetable.
- Boil always with the stalk-ends uppermost.
- Boil very young artichokes for half to three-quarters of an hour, or full-grown ones for one and one-quarter to two hours, until the leaves can be drawn out easily.
- Send good melted butter to table with them.
