Beef Kidney (A plainer way)

Ingredients
- beef kidney
- salt
- pepper
- flour
- 1 small slice butter
- 1 dessertspoonful flour
- 1 cup water
- mushroom catsup or other store sauce
- minced herbs
- onion
Instructions
- Trim and cut the kidney into slices.
- Season the slices with salt and pepper, and dredge them well with flour.
- Fry them on both sides until done through.
- Lift the kidney slices out and empty the pan.
- Make gravy in the same pan with a small slice of butter, a dessertspoonful of flour, pepper and salt, and a cup of boiling water.
- Shake these together and give them a minute's simmering.
- Add a little mushroom catsup, lemon juice, eschalot vinegar, or any store sauce that will give a good flavour.
- Stir in minced herbs if desired, and add a small quantity of shredded onion if liked.
