Beef Kidney (A plainer way)

  1. Trim and cut the kidney into slices.
  2. Season the slices with salt and pepper, and dredge them well with flour.
  3. Fry them on both sides until done through.
  4. Lift the kidney slices out and empty the pan.
  5. Make gravy in the same pan with a small slice of butter, a dessertspoonful of flour, pepper and salt, and a cup of boiling water.
  6. Shake these together and give them a minute's simmering.
  7. Add a little mushroom catsup, lemon juice, eschalot vinegar, or any store sauce that will give a good flavour.
  8. Stir in minced herbs if desired, and add a small quantity of shredded onion if liked.
