Lamb Tripe Soup

Ingredients
- lamb tripe
- cooking liquid from the lamb
- white pepper
- vinegar
Instructions
- Clean the lamb tripe thoroughly.
- Cook it until very tender, then shred it finely.
- Simmer the shredded tripe in its own cooking liquid (the 本湯, or broth from cooking the tripe).
- White pepper and vinegar may be added according to taste.
- Note: Yuan Mei observes that northerners achieve a crisper texture through stir-frying that southerners cannot replicate.
- He also mentions that the lamp-roasted lamb meat (鍋燒羊肉) prepared at the household of Qian Yusha, a provincial official, is exceptionally fine, and he had sought out their method.
