Lamb Tripe Soup

Ingredients
- lamb tripe
- cooking liquid from the lamb
- to taste white pepper
- to taste vinegar
Instructions
- Clean the lamb tripe thoroughly. Cook it until very tender, then shred it finely. Simmer the shredded tripe in its own cooking liquid (the 本湯, or broth from cooking the tripe). White pepper and vinegar may be added according to taste.
- Note: Yuan Mei observes that northerners achieve a crisper texture through stir-frying that southerners cannot replicate. He also mentions that the lamp-roasted lamb meat (鍋燒羊肉) prepared at the household of Qian Yusha, a provincial official, is exceptionally fine, and he had sought out their method.
