A Common Receipt for Salting Beef

Instructions

  1. Dry both the saltpetre and common salt thoroughly, then powder them finely.
  2. Rub the saltpetre equally over the entire surface of the meat.
  3. Apply the salt next, covering every part thoroughly.
  4. Rub the meat thoroughly with the pickle.
  5. Turn the meat daily for seven to ten days.
  6. If desired, mix an ounce or two of sugar with the saltpetre before application for a more tender and palatable result.
