A Common Receipt for Salting Beef

Ingredients
- 16 lbs beef
- 1 oz saltpetre
- 1 lb common salt
- 1–2 oz sugar
Instructions
- Dry both the saltpetre and common salt thoroughly, then powder them finely.
- Rub the saltpetre equally over the entire surface of the meat.
- Apply the salt next, covering every part thoroughly.
- Rub the meat thoroughly with the pickle.
- Turn the meat daily for seven to ten days.
- If desired, mix an ounce or two of sugar with the saltpetre before application for a more tender and palatable result.
