An Irish Stew

Ingredients
- 2 lbs small thick mutton cutlets
- 4 lbs potatoes
- 0.5 oz pepper
- 1 oz salt
- 0.75 pint cold water
- onion, minced
Instructions
- Slice the potatoes thick and peel them.
- Lay a portion of sliced potatoes in a flat layer in a large thick saucepan or stewpan.
- Season the mutton cutlets well with pepper.
- Place some of the seasoned mutton on the layer of potatoes.
- Cover the mutton with another layer of potatoes.
- Continue layering mutton and potatoes in alternation until all ingredients are used, reserving plenty of potato for the top layer.
- If using onion, strew minced onion over the potatoes.
- Pour in three quarters of a pint of cold water.
- Bring the stew to a boil, then add an ounce of salt.
- Let it simmer gently for two hours.
- Serve very hot.
