Boiled Cider

Ingredients
- 1 new sweet cider
- 1–2 clove
- 1 grain allspice
- 1 blade mace
- sugar
Instructions
- Reduce new sweet cider by half through gentle boiling, skimming it clean as it boils. Once reduced, pour into bottles, adding a clove or two, a grain of allspice, and a blade of mace to each bottle. Cork and seal the bottles, then keep in a cool place.
- Variant: Add sugar towards the end of the boiling process, enough to make a thinnish syrup, which can be served as a sauce for simple desserts.
