Strawberry Liqueur

Ingredients
- 2 gallons strawberries
- 1 pint water
- 1 pound sugar
- 1 pint whiskey or whiskey and brandy mixed
Instructions
- Wash, hull, and mash the strawberries. Place over the fire and bring to a quick boil, skimming clean. Simmer for five minutes. Add a pint of boiling water and strain as for jelly.
- Measure the juice. For each pint of juice, take a pound of sugar and return to the kettle. Simmer fifteen minutes, skimming clean throughout. Remove from the fire and measure again.
- To each quart of the cooked juice, add a pint of good whiskey, or a mixture of whiskey and brandy. Bottle while still hot and seal. Small bottles are recommended.
- Variation: By adding spices to taste while the juice is simmering, you can turn the liqueur into strawberry cordial instead.
