Common Turnip Soup

Instructions

  1. Wash and wipe the turnips, then pare them.
  2. Cut them into slices about a quarter of an inch thick.
  3. Melt the butter in a clean stewpan.
  4. Add the turnips to the butter before it begins to boil.
  5. Stew them gently for three quarters of an hour, taking care they do not brown.
  6. Have the soup stock ready boiling, then pour it into the pan with the turnips.
  7. Let them simmer in the soup for three quarters of an hour.
  8. Pulp the whole through a coarse sieve or soup strainer.
  9. Return it to the fire and keep it stirred until it has boiled for three or four minutes.
  10. Take off the scum.
  11. Add salt and pepper if required.
  12. Serve very hot.
