Blackberry Mush (Leslie Fox)
Origin: Clarksville, Tennessee
Source: Martha McCulloch-Williams, 1913
Ingredients
- 1 quart fresh, very ripe blackberries
- water
- 2 pounds flour or cornstarch
- sugar
- cream
Instructions
- Wash the blackberries after picking. Put them in a pot with barely enough water to prevent burning. Bring to a good boil and skim clean.
- Wet the flour or cornstarch well with cold water, then add it gradually to the berries. Add sugar to taste.
- Cook, stirring often, until the mass looks thick and glossy. Pour into a pudding dish, let cool, then chill thoroughly.
- Serve with cream—either plain, whipped, or sweetened.
