Fried Mackerel

Ingredients
- mackerel
- salt
- pepper or cayenne
- flour
- lard
- 1.5 ounce butter
- 1 teaspoon flour
- 0.5 pint good broth or gravy
- 1 lemon
- 1 tablespoon made mustard
- 1 dessertspoon chili vinegar
- thick melted butter
- Harvey's sauce or mushroom catsup
Instructions
- Empty and wash the mackerel extremely clean.
- Cut off the heads and tails, split the bodies quite open, and remove the backbones (or take the flesh cleanly off the bones).
- Wipe the mackerel very dry.
- Dust the fish with fine salt, pepper or cayenne.
- Flour the fish well.
- Fry them a fine brown in boiling lard.
- Drain them thoroughly.
- In a small saucepan, dissolve an ounce and a half of butter smoothly mixed with a teaspoonful of flour, along with salt, pepper, or cayenne.
- Shake these over a gentle fire until they are lightly coloured.
- Add by slow degrees nearly half a pint of good broth or gravy, and the juice of one large lemon.
- Boil the sauce for a couple of minutes.
- Serve the fish with the hot sauce.
