Spinach (Common English mode)

Ingredients
- spinach
- 1 slice fresh butter
- water
Instructions
- Boil the spinach very green in plenty of water.
- Drain thoroughly, then press the moisture from it between two trenchers.
- Chop the spinach small.
- Put it into a clean saucepan with a slice of fresh butter.
- Stir the whole until well mixed and very hot.
- Smooth it in a dish and mark it in dice.
- Send it quickly to table.
