To Boil Turnips

Instructions

  1. Pare the fibrous rind entirely from the turnips.
  2. Either split the turnips once or leave them whole.
  3. Throw them into boiling, slightly salted water.
  4. Keep the pot closely covered from smoke and dust.
  5. Boil small, young turnips for fifteen to twenty minutes until tender.
  6. Boil full-grown turnips for three quarters to a full hour or more with gentle heat until tender.
