Instructions

  1. Wash the beet roots delicately clean, but neither scrape nor cut them, as damage to the skin will injure their colour.
  2. Throw them into boiling water.
  3. Boil according to their size, from one and a half to two and a half hours, or longer if requisite.
  4. Once tender, pare the beets.
  5. Serve them whole, or cut into thick slices and neatly dish in a close circle.
  6. Send melted butter to table with them.
