Instructions

  1. Wash the rice thoroughly, changing the water several times.
  2. Drain and press it in a cloth.
  3. Spread it on a dish and dry it perfectly.
  4. Beat it in a mortar to a smooth powder.
  5. Sift it through a fine sieve.
  6. When used to thicken soup or sauces, mix it with a small quantity of cold water or of broth.
  7. Pour it to the soup or sauces while they are boiling.
