To Boil Soles

Ingredients
- 1 fresh sole
- salt
- anchovy, shrimp, or lobster sauce
Instructions
- Empty the sole, remove the gills, and cut off the fins.
- Cleanse and wash it with great care, but do not skin it.
- Lay it into cold water in which salt has been dissolved in the usual proportion.
- Heat it rather slowly, then simmer it from five to ten minutes according to its size.
- Drain it well on the fish-plate as it is lifted out.
- Dish it on a napkin with the white side upwards.
- Serve it quickly with anchovy, shrimp, or lobster sauce, or alternatively thickly covered with Cream Fish Sauce, Caper Fish Sauce, or Lady's Sauce.
