To Boil Soles

Instructions

  1. Empty the sole, remove the gills, and cut off the fins.
  2. Cleanse and wash it with great care, but do not skin it.
  3. Lay it into cold water in which salt has been dissolved in the usual proportion.
  4. Heat it rather slowly, then simmer it from five to ten minutes according to its size.
  5. Drain it well on the fish-plate as it is lifted out.
  6. Dish it on a napkin with the white side upwards.
  7. Serve it quickly with anchovy, shrimp, or lobster sauce, or alternatively thickly covered with Cream Fish Sauce, Caper Fish Sauce, or Lady's Sauce.
