Wafers (For Invalids or Parties)
Origin: Clarksville, Tennessee
Source: Martha McCulloch-Williams, 1913
Ingredients
- 1 cup lard or butter
- 1 quart flour
- sweet milk
- pinch salt
Instructions
- Rub the cup of lard or butter through the sifted flour. If using butter, it will provide enough salt; if using lard, add a pinch of salt.
- Mix with sweet milk (the richer the better) to form a smooth dough—not stiff nor soft.
- Shape the dough into balls the size of a small egg. Roll out very thin and prick lightly all over.
- Bake brown in a quick oven for about five minutes.
- Cool on cloth and keep dry. Handle delicately—if the wafers are what they should be, they will break and crumble at any rough touch.
