Wafers (For Invalids or Parties)

Ingredients

Instructions

  1. Rub the cup of lard or butter through the sifted flour. If using butter, it will provide enough salt; if using lard, add a pinch of salt.
  2. Mix with sweet milk (the richer the better) to form a smooth dough—not stiff nor soft.
  3. Shape the dough into balls the size of a small egg. Roll out very thin and prick lightly all over.
  4. Bake brown in a quick oven for about five minutes.
  5. Cool on cloth and keep dry. Handle delicately—if the wafers are what they should be, they will break and crumble at any rough touch.
