An Excellent Receipt for French Beans à la Française

Ingredients
- 1 to 2 quarts young French beans, freshly gathered
- 2 ounces fresh butter
- 1 small dessertspoonful flour
- salt and pepper
- 1 small cupful good veal gravy or sweet rich cream
- 2 fresh egg yolks, beaten
- 1 dessertspoonful lemon juice
Instructions
- Boil the young beans until tender, 15 to 20 minutes.
- Drain the beans thoroughly of all water.
- Melt the fresh butter in a clean saucepan.
- Stir the flour smoothly into the melted butter.
- Keep the butter and flour well shaken and gently simmered until lightly browned.
- Add salt and pepper to the browned butter and flour mixture.
- Pour in the veal gravy (or cream) by degrees, stirring as you add it.
- Toss the drained beans in the sauce until they are as hot as possible.
- Remove the pan from the fire and stir in quickly the beaten yolks of the two eggs and the lemon juice.
- Serve without delay.
