An Excellent Receipt for French Beans à la Française

Instructions

  1. Boil the young beans until tender, 15 to 20 minutes.
  2. Drain the beans thoroughly of all water.
  3. Melt the fresh butter in a clean saucepan.
  4. Stir the flour smoothly into the melted butter.
  5. Keep the butter and flour well shaken and gently simmered until lightly browned.
  6. Add salt and pepper to the browned butter and flour mixture.
  7. Pour in the veal gravy (or cream) by degrees, stirring as you add it.
  8. Toss the drained beans in the sauce until they are as hot as possible.
  9. Remove the pan from the fire and stir in quickly the beaten yolks of the two eggs and the lemon juice.
  10. Serve without delay.
