Brain Cakes

Ingredients
- brains
- 1 teaspoonful sage
- 0.5 teaspoonful salt
- 0.25 teaspoonful mace
- white pepper or cayenne
- 1 egg
- butter
- 1 teaspoonful flour
- lemon-grate
Instructions
- Wash and soak the brains well in cold water.
- Soak the brains in hot water.
- Free the brains from the skin and large fibres.
- Boil the brains in lightly salted water for two to three minutes.
- Beat the boiled brains with a teaspoonful of finely chopped sage (or equal parts sage and parsley).
- Add half a teaspoonful of salt (or rather more), half as much mace, a little white pepper or cayenne, and one egg to the brains; optionally add a teaspoonful of flour and a little lemon-grate.
- Drop the mixture in small cakes into a pan.
- Fry the cakes in butter until a fine light brown.
