Stir-Fried Sturgeon Slices

  1. Slice the sturgeon fish thinly. Heat oil in the wok and fry the slices until cooked through. Add rice wine and autumn-pressed soy sauce (秋油 — Yuan Mei's term for autumn-pressed soy), and roll the ingredients in the wok thirty times to develop flavor. Add water and continue rolling. Remove from heat, season with winter melon ginger (瓜薑) and finely chopped scallions. Use generous amounts of the aromatics to finish the dish.
