Lobster

Ingredients
- spiny lobster (aragosta/arigusta)
- onion
- carrots
- parsley
- count bay leaves
- spoonful vinegar
- pinch salt
- fine oil
- lemon juice or vinegar
- count hard-boiled egg yolk
- pepper
Instructions
- Tie the live lobster's tail under it and boil 30-40 minutes in water flavored with onion, carrot, parsley, two bay leaves, two spoonfuls of vinegar, and salt.
- Let it cool in its broth, drain by squeezing the tail, dry, and rub with a little oil for gloss.
- Cut it head to tail for easy serving; dress with oil and lemon, or serve with mayonnaise or a piquant sauce.
- Optional sauce: chop the head meat with a hard-boiled yolk and parsley, season with pepper and little salt, and thin with fine oil and lemon juice or vinegar.
