Instructions

  1. Tie the live lobster's tail under it and boil 30-40 minutes in water flavored with onion, carrot, parsley, two bay leaves, two spoonfuls of vinegar, and salt.
  2. Let it cool in its broth, drain by squeezing the tail, dry, and rub with a little oil for gloss.
  3. Cut it head to tail for easy serving; dress with oil and lemon, or serve with mayonnaise or a piquant sauce.
  4. Optional sauce: chop the head meat with a hard-boiled yolk and parsley, season with pepper and little salt, and thin with fine oil and lemon juice or vinegar.
