Small Pain de Veau, or Veal Cake

Ingredients
- 1 lb veal
- 6 oz beef kidney-suet
- 1 teaspoonful salt
- 1/3 teaspoonful white pepper
- 1/3 teaspoonful mace or nutmeg
- 1/2 lemon
- 3 oz ham, boiled lean
Instructions
- Chop the veal very fine, removing all fat and skin.
- Chop the beef kidney-suet very fine separately.
- Combine the chopped veal and suet, then add the salt, white pepper, mace or nutmeg, and grated lemon rind.
- Mix the whole thoroughly together with the chopping-knife until well combined.
- If using ham, mince it small and add it to the mixture.
- Press the mixture smoothly into a small round baking dish.
- Bake in a moderate oven for an hour and a quarter.
- Lift the baked cake into a clean hot dish.
- Serve plain, or with a little brown gravy in a tureen.
