Small Pain de Veau, or Veal Cake

Ingredients

Instructions

  1. Chop the veal very fine, removing all fat and skin.
  2. Chop the beef kidney-suet very fine separately.
  3. Combine the chopped veal and suet, then add the salt, white pepper, mace or nutmeg, and grated lemon rind.
  4. Mix the whole thoroughly together with the chopping-knife until well combined.
  5. If using ham, mince it small and add it to the mixture.
  6. Press the mixture smoothly into a small round baking dish.
  7. Bake in a moderate oven for an hour and a quarter.
  8. Lift the baked cake into a clean hot dish.
  9. Serve plain, or with a little brown gravy in a tureen.
