- Roasting pork requires patience and proper sequencing. Begin by roasting the inner meat layer first, allowing the fat and oils to penetrate into the skin layer; this renders the skin crisp and fragrant while preventing the flavor from dissipating. Only after the inner meat is sufficiently cooked should you roast the outer skin. If you roast the skin first, all the fat from the meat will fall away into the fire, the skin will become scorched and hard, and the flavor will be inferior. This principle applies equally to roasting young suckling pig.
