Truffled Sausages (Saucisses aux Truffes)

Ingredients
- 2 pounds lean pork
- 1 pound pork fat
- 0.25 pound truffles
- 1.5 ounces salt
- cayenne pepper
- 1 nutmeg
- 1 teaspoon mace
- 1 dessertspoon savoury herbs
- 1–2 glasses Madeira
- sausage skins
Instructions
- Combine the lean pork and fat with the minced truffles, salt, cayenne or white pepper, nutmeg, mace, and powdered savoury herbs.
- Test a small morsel of the mixture and adjust any of the seasonings to taste.
- If preparing for immediate use and desired, moisten the meat with one or two glassfuls of Madeira.
- Stuff the mixture into delicately clean sausage skins.
