Queen Cakes

  1. Beat and sift the sugar. Work the butter to a cream, then add the sugar.
  2. Beat the egg whites for twenty minutes until stiff, then mix them into the butter and sugar.
  3. Beat the egg yolks for half an hour until pale and thick, then add them to the butter mixture.
  4. Beat the whole together until well combined. Fold in the flour, grated spices, and currants.
  5. Place the batter into tins, sift a little sugar over the top, and bake until golden.
