Queen Cakes

Ingredients
- 1 pound sugar
- 1 pound flour
- 1 pound butter
- 8 eggs
- 0.5 pound currants
- 1 nutmeg
- 1 mace
- 1 cinnamon
Instructions
- Beat and sift the sugar. Work the butter to a cream, then add the sugar.
- Beat the egg whites for twenty minutes until stiff, then mix them into the butter and sugar.
- Beat the egg yolks for half an hour until pale and thick, then add them to the butter mixture.
- Beat the whole together until well combined. Fold in the flour, grated spices, and currants.
- Place the batter into tins, sift a little sugar over the top, and bake until golden.
