Excellent Potato Flour, or Arrow-Root

Ingredients

Instructions

  1. Grate six pounds of sound mealy potatoes into a large vessel full of cold water and stir well together.
  2. After six hours, pour off the water and add fresh water, stirring the mixture well.
  3. Repeat the process of pouring off and refreshing the water every three or four hours during the day.
  4. Change the water again at night, and the next morning pour it off.
  5. Add two or three quarts more water to the potatoes.
  6. Turn the mixture directly into a hair-sieve set over a pan to receive the flour.
  7. Wash the flour through the sieve by pouring water over it.
  8. Let the flour settle in the pan and drain off the water.
  9. Spread the potato sediment on dishes and dry it in a slow oven.
  10. Sift the dried flour.
  11. Put the flour into bottles or jars and cork or cover them closely.
