Breslaw of Beef

Ingredients
- 1/2 lb undressed roast beef
- 4 oz fine bread-crumbs
- 1 teaspoon parsley
- 2/3 teaspoon thyme
- 2 oz butter
- 1/2 cup gravy or cream
- 1/2 teaspoon pepper
- 1/2 teaspoon cayenne
- 1/2 teaspoon mace or nutmeg
- 1 teaspoon salt
- 3 whole eggs
- grated lemon-rind
- fat from the joint
Instructions
- Trim the brown edges from the roast beef and shred it small.
- Mix the shredded beef with the fine bread-crumbs, minced parsley, thyme, broken butter, gravy or cream, pepper, cayenne, mace or nutmeg, and salt.
- Whisk the eggs well and add them to the mixture.
- Melt a little butter in a deep dish.
- Pour in the beef mixture and bake for half an hour.
- Turn the breslaw out onto a serving dish.
- Send to table with brown gravy in a tureen.
