Roast Saddle of Mutton

Ingredients
- 1 joint saddle of mutton
Instructions
- Ensure the butcher has raised the skin from the saddle and skewered it back on before roasting.
- Position the joint at sufficient distance from the fire to prevent the fat from burning.
- Roast with constant basting throughout.
- Less than half an hour before the mutton is done, remove the skin from the joint.
- Baste the joint well and flour it lightly.
- Continue roasting until the fat is delicately browned and the meat is cooked through.
