To Boil Whitings

Ingredients

Instructions

  1. Scrape, cleanse, and wipe the whitings.
  2. Lay them on a fish-plate and put them into water at the point of boiling.
  3. Throw in a handful of salt, two bay leaves, and plenty of parsley well washed and tied together.
  4. Let the fish just simmer from five to ten minutes, watching them closely so they do not become overdone.
  5. Serve with parsley and butter made using the liquor in which the whitings have been boiled.
