Green Apple Pie

Ingredients
- Green apples
- 3 cups Sugar
- 1 cup Water
- 1–2 blades Mace
- Pie crust
Instructions
- Prepare apples by removing stalks and nibs. Slice them crosswise into three pieces each. Drop the slices into water immediately as you work to prevent discoloration. Make a rich syrup by combining three cups sugar with one cup water. Bring to a boil and skim off any impurities. Add the apple slices and a blade or so of mace. Cook quickly until the apples are preserved through (thoroughly cooked and syrupy). You may finish this pie in several ways:
- Bake between crust in the common way (in a double-crust pie).
- Bake a crust crisp after pricking it well, and spread the preserved fruit over it.
- Make small turnovers: bake instead of frying them, ensuring the oven is hot enough to brown without burning.
- Make into shortcake, layering the fruit between the layers of crust, and serve with rich sauce or sweetened cream.
