Tomato Layer

  1. Peel and slice the tomatoes. Slice the onions thin. Cut the kernels from the corn ears and reserve the milk.
  2. In an earthen baking dish, begin with a layer of tomato slices. Season well with salt and pepper and a small amount of sugar. Lay onion slices over the tomatoes, sprinkle lightly with salt, then add a layer of corn kernels seasoned with salt and a little sugar. Repeat these layers until the dish is full.
  3. Pour the reserved corn milk, tomato juice, and melted butter over all the layers.
  4. Bake in a hot oven for half an hour, covering the dish for the first twenty minutes, then uncovering to brown for the remaining time. If corn is not in season, very crisp brown bread crumbs may be used instead. A shredded green pepper may be mixed through the layers if desired.
