Gooseberry Jam Spiced

Ingredients
- 0.5 gallon green gooseberries
- 6 cups sugar
- 1 cup water
- 0.5 teaspoon cloves
- 0.5 teaspoon allspice
- 0.5 teaspoon mace
- 0.5 teaspoon nutmeg
- 0.5 teaspoon cinnamon
- 1 whole orange
Instructions
- Wash and nub half a gallon of green gooseberries picked just before they ripen. Put them in a kettle with six large cups of sugar, a cup of water, half a teaspoon each of cloves, allspice, mace, grated nutmeg, and cinnamon, along with the grated yellow peel of an orange and its strained juice.
- Cook slowly until thick. It should jelly when dropped on a plate. Pack in small jars.
- Variation: By leaving out the spices and merely cooking the berries thick enough to cut like cheese, it serves as fine as bar le duc for serving with salad.
