Ricotta Fritters

Ingredients

Instructions

  1. Combine ricotta, Parmesan, flour, eggs, parsley, spices and salt into a dough.
  2. On a floured board with floured hands, form twelve soft croquettes and flatten them slightly.
  3. Brown them in butter on both sides, then moisten with tomato sauce or dissolved tomato paste.
  4. Serve as an entremets or alongside a beefsteak or hot roast beef.
