Ricotta Fritters

Ingredients
- 200 g ricotta
- 50 g grated Parmesan
- 30 g flour
- 2 eggs
- chopped parsley
- spices
- salt
- butter
- tomato sauce or dissolved tomato paste
Instructions
- Combine ricotta, Parmesan, flour, eggs, parsley, spices and salt into a dough.
- On a floured board with floured hands, form twelve soft croquettes and flatten them slightly.
- Brown them in butter on both sides, then moisten with tomato sauce or dissolved tomato paste.
- Serve as an entremets or alongside a beefsteak or hot roast beef.
