Another Common Sauce of Cucumbers

Instructions

  1. Dissolve two ounces or more of butter in a saucepan and bring it to the boil.
  2. Add the pared and sliced cucumbers (two or three, depending on size) and place the pan high over the fire so they stew as softly as possible without taking colour.
  3. Continue stewing for three-quarters of an hour or longer if needed.
  4. When the cucumbers are half done, season them well with white pepper and salt.
  5. Just before serving, mix half a teaspoon of flour with a morsel of butter.
  6. Stir the flour and butter mixture into the sauce.
  7. Strew in the minced parsley and give the sauce a boil.
  8. Finish with a spoonful of good vinegar.
