Potato Soup

Instructions

  1. Mash the steamed or boiled potatoes to a smooth paste.
  2. Gradually mix in the boiling broth, stirring well.
  3. Pass the soup through a strainer.
  4. Return the soup to the fire, add pepper and salt to taste, and let it boil for five minutes.
  5. Skim off the black scum that rises to the surface.
  6. If desired, fry the minced onions a light brown and add them to the soup.
  7. Let the onions stew in the soup for ten minutes.
  8. Serve very hot with fried or toasted bread.
