A Quickly Made Turnip Soup

Ingredients
- 3 pounds young mild turnips
- 3 pints veal or mutton stock, or good broth
- 1 quart stock
- to taste salt
- to taste white pepper
- 1 lump of sugar
- 1 large white onion
- optional cream
Instructions
- Pare and slice the turnips into three pints of veal or mutton stock or good broth.
- Stew them gently for twenty-five to thirty minutes, or until they can be reduced quite to pulp.
- Rub the whole through a sieve.
- Add to it another quart of stock, a seasoning of salt and white pepper, and one lump of sugar.
- Give it two or three minutes' boil.
- Skim and serve it.
